Ingredients

FOR THE DOUGH

  • 200 g strong white bread flour
  • Pinch of salt
  • 1 sachet dried yeast
  • ½ tablespoon caster sugar
  • 150 ml water , lukewarm

FOR THE TOPPING

  • 1 red onion , finely sliced
  • Thyme
  • 1 tablespoons olive oil
  • 3 tablespoons balsamic vinegar

Focaccia

If, like me, you love soft flavoured breads then this one is for you.  This is so full of flavour and can be eaten on its own or with your favourite relish.

Instructions

Add yeast and caster sugar to the lukewarm water

Wait for about a minute until it froths

Add flour and salt to a large bowl

Pour liquid onto flour and mix into dough

Knead for about 5 minutes


Cover and sit to prove for 20 minutes


Add oil to pan

Add thyme to pan

Cut onion and add to pan

Fry until browned

Add balsamic vinegar to pan

Cook off the vinegar for a few minutes

Put aside to cool

Add dough to a pan

Push it into the corners

Push fingers into dough to create dimples

Add onion mix to top

Drizzle olive oil over the top

Set aside to prove for 20 minutes


Preheat oven to 220 fan

Cook for 20 minutes
