Ingredients

  • 275g plain flour
  • 225g caster sugar
  • 50g ground almonds
  • 2 tsp baking powder
  • 1/2 tsp of bicarbonate of soda
  • 2 tbsp of Limoncello
  • 1 tbsp of Lemon Curd
  • 150ml skimmed milk
  • 100g butter melted
  • 50ml sunflower or vegetable oil
  • 2 large eggs separated

Instructions

Step 1
Preheat the oven to 200C/180C Fan/Gas 6

Step 2
Line a 12-hole muffin tin with large paper cases or use 12 silicon muffin cups.

Step 3
Melt the butter

Step 4
Beat the egg whites to stiff peaks

Step 5
Put the flour, sugar, almonds, baking powder, and bicarbonate of soda in a large mixing bowl and mix well.

Step 6
Beat together the milk, butter, oil, eggs, Lemon Curd and Limoncello in a jug. 

Step 7
Pour the liquid mix over the dry ingredients

Step 8
Mix together until the dry ingredients are just wet.  (Do not over-mix).

Step 9
Gently fold in the egg whites until combined.

Step 10
Divide the mixture between the cases - about three-quarters full. 

Step 11
Bake for 18 minutes.
