  • Egg whites
  • Caster Sugar - 30g per egg
  • Icing sugar - 30g per egg

Meringues

Chewy and sweet

Instructions

Add egg whites to bowl and whisk

Once peaks appear start to add small amounts of caster sugar

Test graininess of meringue

Keep whisking until smooth

Slowly add icing sugar

Use two desert spoons to create individual blobs on baking paper

Or use icing bag

Set oven to 100 fan

Bake for 90 minutes
